Baked Salmon & Leeks

Delicious and super easy!

INGREDIENTS 
2 6-8oz salmon pieces
1 lb leeks, chopped
1 Tbs butter 
2 Tbs olive oil, divided 
1/2 lemon, juiced 
2 Tbs capers 
salt and black pepper to taste 

INSTRUCTIONS 
  1. Preheat the oven to 400 °F (200 °C). 
  2. Melt butter and 1 Tbs olive oil in a deeper pan and add the chopped leeks, season with salt and pepper, and saute on a low to medium heat for 10-15 minutes until they are soft. 
  3. Remove leeks from heat and spread evenly on the bottom of a shallow baking dish (big enough to hold the fish) 
  4. Pat dry the fish and brush it with the remaining tablespoon of olive oil (or more, if needed). 
  5. Transfer the fish to the baking dish and lay atop the leeks. 
  6. Pour the lemon juice over the fish, season with salt and pepper liberally, and sprinkle the capers all over the salmon.
  7. Bake for 15-20 minutes - until the fish is cooked through.
  8. Garnish with more lemon, capers and serve.
