Baked Salmon & Leeks
Delicious and super easy!
INGREDIENTS
2 6-8oz salmon pieces
1 lb leeks, chopped
1 Tbs butter
2 Tbs olive oil, divided
1/2 lemon, juiced
2 Tbs capers
salt and black pepper to taste
INSTRUCTIONS
- Preheat the oven to 400 °F (200 °C).
- Melt butter and 1 Tbs olive oil in a deeper pan and add the chopped leeks, season with salt and pepper, and saute on a low to medium heat for 10-15 minutes until they are soft.
- Remove leeks from heat and spread evenly on the bottom of a shallow baking dish (big enough to hold the fish)
- Pat dry the fish and brush it with the remaining tablespoon of olive oil (or more, if needed).
- Transfer the fish to the baking dish and lay atop the leeks.
- Pour the lemon juice over the fish, season with salt and pepper liberally, and sprinkle the capers all over the salmon.
- Bake for 15-20 minutes - until the fish is cooked through.
- Garnish with more lemon, capers and serve.
